The appetizer is as simple as it gets and quick to do, in just 15 minutes they are ready.
If you have zucchini and Parmesan, or otherwise a dry Manchego cheese in the fridge you can make this healthy version, you’ll see how addictive it is, believe me when I say you will not be able to stop eating.

- 120 ml of vegetable oil
- 100 grams of Panko bread crumbs
- 50 grams of grated Parmesan cheese
- 2 zucchini cut into thin slices
- 50 grams of all-purpose flour
- 2 large eggs
Heat oil in a large skillet over medium-high heat. Prepare another bowl with flour and finally in another bowl beat the two eggs.
Cut the zucchini into thin slices of approximately 3 mm and flour them with a very thin layer. Then you go through the beaten egg and finally with Parmesan and panko mixture that you need to prepare in another bowl.
When the oil is hot you can fry the zucchini slices , turn them over once browned and crispy, it takes about one minute per side, repeat this process many times to do away with all the zucchini slices. Fried zucchini leaves on a plate with kitchen paper to absorb the oil.
