With the arrival of warm weather also reach our good intentions to eat healthier. Vegetables, salads and fresh dishes they want to sneak into our table, and we leave of course, but always with a special taste like they have these tomatoes baked with goat cheese, curry and basil that I have cooked today.
Ingredients for four people
- 4 tomatoes, a roller goat cheese
- 100 g of light cream cheese
- 1 egg
- 12 basil leaves
- 2 pinches of curry
- 2 tablespoons extra virgin olive oil
- Salt and pepper
How to make stuffed tomatoes with goat cheese, curry and basil
We begin preheating the oven to 180 degrees. Wash tomatoes and cut them a layer top as a lid. With a teaspoon let the draining, we reserve the meat of tomato sauce or add to a stew.
In a bowl put the goat cheese at room temperature, we add the cream cheese, also at room temperature and then add beaten egg. Use a fork to let stirring to integrate the ingredients , season and chop with four basil leaves and a pinch curry.
Fill the tomatoes with this mixture, place a basil and put the cap on top. We place them on a baking tray with olive oil and bake for 45 minutes. Before serving decorate with fresh basil.
